I make these peanut butter chocolate chip energy bites every week. My family and I love them so much! They are great as a snack, an addition to breakfast, or an after-meal treat. By using a mix of almond flour and coconut flour, these protein balls stay low-carb and have a cookie-dough-like consistency.
This recipe is great to make with kids too. My 4-year-old son likes to help me measure the ingredients and then he can roll them into a ball by himself. He also loves eating them, and I love that they are a homemade healthy addition to his diet.
Energy Bite Ingredients:
- Almond Flour: Naturally low-carb, high in protein, and nutrient-dense. This flour is grain free and high in magnesium, Vitamin E, and prebiotic dietary fiber. It also is finely ground compared to oats which are typically used in energy bites.
- Coconut Flour: This adds a nice light coconut flavor and is also low in carbs but high in protein.
- Peanut Butter: Creamy and delicious and high in protein, I eat PB every day. It will help bind all the ingredients together. You could sub almond butter, which I’ve wanted to try too.
- Hemp Seeds: Also called Hemp Hearts, they have a mild nutty flavor and are rich in omega-3 fatty acids.
- Pure Maple Syrup: For a natural sweetness and also helps as a binder.
- Vanilla: Adds a warm flavor that makes it taste like a treat!
- Semi-Sweet Chocolate Chips: This creates a nice crunch and is not too sweet.
