Banana bread is one of my favorite baked goods! My Dad hands down makes the very best banana bread. But I always wanted to create my own healthier version so we could eat it more often and not feel like it was reserved for just a once-in-a-while treat.

I have tweaked my banana bread recipe more times than I can count but I truly believe I have finally created “the one”. It’s so moist, delicious, and simple to make. I mean, seriously. What’s not to love?

When I make this easy healthy banana bread recipe, it doesn’t last long in our house. Knowing it’s sitting on the kitchen counter keeps everyone at home coming back for another bite all day long. I love having it for breakfast with coffee, as an afternoon snack, or for an after-dinner dessert.

There is also an option to add a cinnamon and sugar topping to this banana bread recipe and it’s an excellent addition to making it taste and look like it came straight from the bakery!

Made with whole wheat flour and naturally sweetened with pure maple syrup instead of refined sugar, it’s healthy and moist with a rich banana flavor. Easy to make and perfect for sharing, you will absolutely love this recipe. And as an added bonus, the vanilla and cinnamon will make your home smell so good.

Bananas are a staple in our house and I always buy extra each week so I can use some over-ripe ones for baking and or smoothies. So if you have some extra ripe bananas this week, you must try out this recipe!

Equipment

  • 1 Mixing Bowl
  • 1 loaf pan

Ingredients
  

  • 3 large ripe bananas
  • 1/3 cup melted butter
  • 1/4 cup packed brown sugar
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/3 cup walnut pieces optional
  • 1/2 tsp salt

Instructions
 

  • Preheat your oven to 350 °F
  • In a large mixing bowl mash the bananas with a fork.
  • Then add your egg and mix it with the banana.
  • Add in the rest of the ingredients and mix by hand until combined.
  • Spray your loaf pan with non-stick spray.
  • Put the batter in and cook for 40 min. Then check by inserting a toothpick in the center and if it comes out clean it's done, if not add 3 more mins. Repeat if necessary. (I have found everyone's oven cooks a bit differently so you may need more time)

Cinnamon & Sugar Topping

  • Mix the cinnamon and sugar and sprinkle it on top of the batter right before you put it in the oven.

I make these every single week! They’re the perfect snack or healthy bite when you’re craving a sweet treat. If you like Perfect Bars like we do, you’re going to love these!

Copycat Perfect Bar Protein Bites (makes 12)
• ½ cup peanut butter
• ¼ cup honey
• 1 tsp vanilla
• ¼ cup oat flour + 3 tbsp oat flour
• ¼ cup almond flour
• 1 tbsp ground flaxseed
• 3 tbsp chocolate chips
• Pinch of salt

Mix everything together, roll into balls, chill & enjoy!

A fun little lunchbox treat that sneaks in some extra goodness! These mini muffins have ½ cup of zucchini + ground flaxseed mixed right into the batter — but you’d never know because they’re still sweet, soft and full of rainbow sprinkles. 🌈

They’re perfect for:

✨ whenever you want a fun treat with a few extra nutritious ingredients

Makes: about 24 mini muffins 
Bake: 375°F for 10–12 minutes

Ingredients
* ½ cup unsweetened applesauce
* ½ cup milk
* ¼ cup unsalted butter, melted and slightly cooled
* 1 large egg, lightly beaten
* 1 tsp vanilla extract
* ½ cup zucchini, blended very smooth
* 1½ cups all-purpose flour
* 3 Tbsp ground flaxseed
* ½ cup granulated sugar
* 1 tsp cinnamon
* 1 tsp baking powder
* ½ tsp baking soda
* ¼ tsp salt
* ⅓ cup rainbow sprinkles + more for topping

Directions
1. Preheat oven to 375°F. Grease a 24-cup mini muffins pan really well.
2. Blend the zucchini until as smooth as you can get it. You want ½ cup of zucchini purée.
3. In a large bowl, whisk together the applesauce, milk, melted butter, egg, vanilla and zucchini.
4. Add the flour, flaxseed, sugar, cinnamon, baking powder, baking soda and salt. Stir just until combined.
5. Gently fold in the sprinkles last. Don’t overmix them or the colors can bleed.
6. Divide the batter into the mini muffin pan and sprinkle the tops with additional sprinkles.
7. Bake for 10–12 minutes, until puffed and a toothpick comes out clean.
