This is my go-to recipe when I’m craving that chocolatey-doughy goodness from a cookie but don’t want to spend the time baking them. Don’t get me wrong, I like making cookies but sometimes I want a faster, easier solution. That’s where this recipe comes in!
This recipe is ridiculously easy! Everything goes into one bowl, and if you know me, that’s my kind of baking! You only use one pan, so no cooling one batch and waiting for another to cook. You simply put all your ingredients into the pan, cook, cool, and enjoy! And bonus, they’re a really great recipe to make with kids!
These blondies are an excellent dessert for a party since they’re fast and you most likely have all the ingredients at home. Chewy and full of chocolate, these are the absolute best chocolate chip blondies!
Delicious Chocolate Chip Blondie Ingredients + Substitutions:
- salted butter- I only ever buy salted butter but you can use unsalted if that’s what you have. Either way, still keep the salt ratio in the recipe the same.
- sugar- I use a mix of half coconut sugar and half dark brown sugar because I don’t like my blondies too sweet. The combo is the perfect amount of sweetness as well as still giving them that deep rich brown color.
- egg + egg yolk- most baking recipes call for an egg or so because it helps bind the recipe plus it gives it great taste and texture. And using an additional egg yolk adds richness to the blondies.
- vanilla extract- in my opinion, vanilla is key for making a baked good taste delicious!
- flour- I typically bake with whole wheat flour. It’s all I keep in my house and I have found you really can’t taste the difference in most baked goods plus it adds a healthier and heartier recipe that I feel better about feeding my family. But all-purpose flour would definitely work in this recipe!
- baking powder- in general, it helps a recipe become light and fluffy which is what we want in this cookie bar.
- sea salt- I have found a pinch of sea salt is key in all baked goods to really help bring out the flavor.
- chocolate chips- the star of the recipe! I used semi-sweet chocolate chips but you could easily use any chopped chocolate you like. I really want to make these with holiday M&M’s for Christmas and Easter!
Tips Before Baking Blondies:
- Let your melted butter cool before adding it to your other ingredients, we don’t want the butter so hot it cooks the eggs!
- If you can wait, which I know is difficult (it is for me too!), let the blondies cool completely before trying to slice them.
- I use a pie dish to make my blondies recipe but an 8×8 pan is also a great choice and will yield you 9 servings instead of 8.
- I usually use convection bake for my baking recipes so that the heat is more evenly distributed but if you use regular bake, know it may take a bit longer for the blondies to cook.
Delicious Chocolate Chip Blondies Recipe
Equipment
- 1 pie dish or 8×8 pan
Ingredients
- 1/2 cup melted, salted butter
- 1 egg + 1 egg yolk
- 1/2 cup brown sugar packed
- 1/4 cup coconut sugar could sub reg white sugar
- 2 tsp pure vanilla extract
- 1 cup whole wheat flour could sub reg flour
- 1/2 tsp baking powder
- pinch of sea salt
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350 °F
- Melt butter and let cool until warm or room temperature.
- In a medium bowl add your egg + egg yolk, sugar, and vanilla and mix well. Then add the warm melted butter.
- Next, add the flour, baking powder, and salt to the bowl. Mix until combined.
- Fold in the chocolate chips.
- Pour the batter into a greased pie dish or 8×8 baking pan.
- Bake for 14 min on convection bake, or 25 min regular bake. It's done when the edges are brown and a toothpick inserted in the center comes out clean from the dough.
- Let cool, slice, and serve.
