I use pure maple syrup in place of sugar and natural peanut butter instead of butter. These two are the “wet” ingredients and help bind the dough together.

I like to store them in a tupperware container in the pantry for 4-5 days or in the fridge for up to a week.
Can I eat the cookie dough?
Because this cookie recipe doesn’t contain regular flour, you absolutely can. However, the baking powder in this recipe makes the dough not taste as good as the cookies so I like to make my peanut butter chocolate chip energy bites instead, which these cookies were inspired by.
8-Ingredient Simple Chocolate Chip Cookies
Ingredients
- 1/2 cup peanut butter natural and runny
- 1/2 cup pure maple syrup
- 1 1/2 tsp vanilla extract
- 2 tsp baking powder
- 1.5 cups almond flour
- 1/4 coconut flour
- 1/4 cup hemp seeds
- 1/2 cup semi-sweet chocolate chips
- pinch of sea salt
Instructions
- Line a baking sheet with parchment paper and preheat your oven to 350 °F
- In a large bowl, mix the peanut butter, maple syrup, and vanilla together.
- Add the almond flour, coconut flour, hemp seeds, baking powder, and salt and mix together.
- Fold in the chocolate chips.
- Roll the dough into 15 or so balls and place them on the parchment-lined baking sheet.
- Gently press the balls down to form the cookies. These cookies are dense so we need to shape them ourselves, they won't flatten out in the oven.
- Bake at 350 °F for 8 min convection or 12 min regular bake.
- Let cool and then enjoy!
- Store on the counter for 4-5 days or in the fridge for up to a week.
