In the hustle and bustle of life, we often find ourselves craving a quick and satisfying meal that doesn’t compromise on flavor. This easy beef and broccoli bowl is a timeless favorite that perfectly fits the bill. Bursting with rich savory flavor of beef, tender broccoli, and fluffy rice, this dish is not only a treat for your taste buds but also a breeze to prepare.

I find myself making this recipe weekly because it comes together so quickly, is delicious, and the cleanup is minimal. If you don’t eat beef, you could try to substitute ground turkey or cooked beans for the protein.

I also have a clever trick to sneak in some extra veggies: When you’re cooking rice, try adding some riced cauliflower. Not only does it boost the fiber and nutrient content of your dish, but it seamlessly blends in with the rice, both in terms of flavor and texture. Give it a try and watch how easily you can amp up the nutritional value of your meal!

You can always omit the riced cauliflower, but I think it’s a great addition. You can usually find it already prepared for you at the grocery store in either the produce section with the bagged salad or in the freezer section with the veggies. It also cooks up very quickly.

So skip the take-out and enjoy this amazing and quick dish!

  • Ground Beef
  • Broccoli
  • Cooked Brown Rice
  • Riced Cauliflower
  • Garlic Powder
  • Seasoning Salt
  • Extra Virgin Olive Oil

Ingredients
  

  • 1 pound ground beef
  • 2 cups chopped broccoli
  • 1 cup riced cauliflower
  • 1 cup cooked rice
  • 1 1/2 tsp seasoning salt, MSG free
  • 1 1/2 tsp garlic powder

Rice

  • 1/4 tsp garlic powder
  • 1/2 tbsp butter

Instructions
 

  • Rinse the rice and add it to a pot along with 1/2 tbsp of butter and 1/4 tsp garlic powder and then cook the rice according to the package instructions.
  • Place a large skillet over medium heat and add 1/2 tbsp of olive oil. Add your ground beef and cook until no longer pink. Season with 1 tsp of seasoning salt and 1 tsp of garlic powder. Transfer the ground beef to a bowl to keep warm.
  • Using the same large skillet over medium heat add another tbsp olive oil.  Add the chopped broccoli and 3 tbsp of water. Cover with a lid and saute for 6-7 min, then check the tenderness of the broccoli and stir.
  • Once the broccoli is tender, add the riced cauliflower and cook an additional 3-5 minutes. Turn off your stove and season the veggies with 1/2 tsp of olive oil, 1/2 tsp of seasoning salt, and 1/2 tsp garlic powder.
  • Add the cooked ground beef and combine it with the veggies. Then add your cooked rice and combine the dish together.
  • Place in bowls, serve, and enjoy!

• ½ cup peanut butter
• ¼ cup honey
• 1 tsp vanilla
• ¼ cup oat flour + 3 tbsp oat flour
• ¼ cup almond flour
• 1 tbsp ground flaxseed
• 3 tbsp chocolate chips
• Pinch of salt

Mix everything together, roll into balls, chill & enjoy!

Makes: about 24 mini muffins 
Bake: 375°F for 10–12 minutes

Ingredients
* ½ cup unsweetened applesauce
* ½ cup milk
* ¼ cup unsalted butter, melted and slightly cooled
* 1 large egg, lightly beaten
* 1 tsp vanilla extract
* ½ cup zucchini, blended very smooth
* 1½ cups all-purpose flour
* 3 Tbsp ground flaxseed
* ½ cup granulated sugar
* 1 tsp cinnamon
* 1 tsp baking powder
* ½ tsp baking soda
* ¼ tsp salt
* ⅓ cup rainbow sprinkles + more for topping

Directions
1. Preheat oven to 375°F. Grease a 24-cup mini muffins pan really well.
2. Blend the zucchini until as smooth as you can get it. You want ½ cup of zucchini purée.
3. In a large bowl, whisk together the applesauce, milk, melted butter, egg, vanilla and zucchini.
4. Add the flour, flaxseed, sugar, cinnamon, baking powder, baking soda and salt. Stir just until combined.
5. Gently fold in the sprinkles last. Don’t overmix them or the colors can bleed.
6. Divide the batter into the mini muffin pan and sprinkle the tops with additional sprinkles.
7. Bake for 10–12 minutes, until puffed and a toothpick comes out clean.
