FOR THE PEANUT BUTTER LAYER

  • Oats: quick or old fashioned rolled oats work best for this recipe. They’re hearty and give a nice chewy texture.
  • Almond Flour: is a binder and adds protein
  • Coconut Flour: adds a mild sweet flavor that pairs well with the chocolate topping
  • Natural Creamy Peanut Butter: helps the cup stay together and gives it that classic Reeses flavor
  • Pure Maple Syrup: maple syrup is a natural sweetener and I think it tastes so well with peanut butter. You could also use honey instead.
  • Vanilla Extract: this adds extra flavor and is so good in sweet treats

FOR THE CHOCOLATE LAYER

  • Semi-Sweeet Chocolate Chips: These are a great balance between milk and dark chocolate. But any of the three will work. I definitely want to try to make these with a dark chocolate layer.
  • Natural Creamy Peanut Butter: adds extra creamy peanut butter flavor
  • Coconut Oil: the oil helps the chocolate chips melt which creates a bit thinner mixture so it’s easier to work with
  • Sea Salt: adding sea salt on top brings out the sweetness and adds that sweet and salty flavor combo

Ingredients
  

Peanut Butter Layer

  • 1/2 cup quick or old fashioned oats
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 cup natural creamy peanut butter
  • 1/2 cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

Chocolate Layer

  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp natural creamy peanut butter
  • 1 tsp coconut oil
  • sea salt for sprinkling on top

Instructions
 

  • In a medium bowl mix together the oats, almond flour, coconut flour, peanut butter, maple syrup, vanilla, and salt.
  • Spray a muffin tin with nonstick cooking spray.
  • Divide the mixture evenly between the muffin tin, pressing the mixture down slightly.
  • Freeze the tray for about an hour.

Chocolate Topping

  • Add the chocolate chips, peanut butter, and coconut oil to a microwave safe small bowl. Microwave in 30-second increments until melted, about 60 seconds.
  • Remove the muffin tin from the freezer and spoon the melted chocolate mixture over the top of each peanut butter cup using the back of the spoon to spread the chocolate. While the chocolate is wet, add a sprinkle of sea salt (optional).
  • Place the tray back in the freezer for about another hour. Then serve and enjoy!
  • Leftovers can be stored in an air-tight container in the fridge for about a week or in the freezer for up to 3 months.
