Ingredients
  

  • 1 cup peanut butter
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 cups oats
  • 3 tbsp hemp hearts
  • 1 tbsp ground flaxseed
  • 1/3 cup chocolate chips

Optional

  • mini m&m's or chocolate candies to add to the top

Instructions
 

  • In a large bowl combine the peanut butter, honey, and vanilla extract. Once mixed, add the oats, sea salt, flax seeds, and hemp seeds. Mix together then add the chocolate chips.
  • Line a baking sheet with parchment paper. Add the mixture to the sheet pan, pressing down lightly in a rectangle shape ensuring it's flat and even.
  • Place the sheet pan in the fridge to chill for an hour. Once set, remove from the fridge and slice into rectangular bars. Use parchment paper to wrap each granola bar for better handling and to avoid sticking when storing.
  • Store in an air tight container in the fridge for a week or in the freezer for at least two months.

Ingredients
  

  • 2 eggs
  • 1 cup peanut butter
  • 1/2 cup pure maple syrup
  • 1.5 tsp vanilla extract
  • 1 cup oats
  • 1/4 cup hemp seeds could omit and add 1/4 cup additional oats
  • 1/4 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/2 cup chocolate chips, heaping

Instructions
 

  • Preheat oven to 350 °F
  • Line a large baking sheet with parchment paper.
  • Whisk the eggs in a large bowl until well beaten. Then add in the peanut butter, maple syrup, and vanilla and stir until well combined.
  • Stir in the rest of the ingredients minus the chocolate chips, and combine until a thick, sticky dough forms.
  • Add in the chocolate chips and stir until they are evenly distributed throughout the dough.
  • Drip golf ball sized mounds of cookie dough onto the cookie sheet, pressing down slightly to flatten them out a bit. I like to take my hands and roll each cookie dough ball before placing it on the cookie sheet but you could use a spoon or scooper.
  • Bake at for about 9-11 min, until the cookies are lightly brown around the edge and they look set. I baked my first batch at 11 min and my second batch at 8 min since this recipe makes about 17 cookies.
  • Allow the cookies to cool for about 10 min before eating.

  • 1 8×8 pan or 1 pie pan

Ingredients
  

  • 2 bananas mashed
  • 3/4 cup cashew butter
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 cup cacao powder
  • 1/8 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350 °F
  • Spray your pan with non-stick spray or line it with parchment paper.
  • Mash the bananas, then add the cashew butter, maple syrup, vanilla, and egg. Mix well.
  • Fold in your baking powder, cacao powder, and salt.
  • Add in your chocolate chips.
  • Pour the batter into the greased pan.
  • Bake for 20-25 min or until a toothpick inserted in the middle comes out clean.
  • Let cool. Slice, and enjoy!!

FOR THE PEANUT BUTTER LAYER

  • Oats: quick or old fashioned rolled oats work best for this recipe. They’re hearty and give a nice chewy texture.
  • Almond Flour: is a binder and adds protein
  • Coconut Flour: adds a mild sweet flavor that pairs well with the chocolate topping
  • Natural Creamy Peanut Butter: helps the cup stay together and gives it that classic Reeses flavor
  • Pure Maple Syrup: maple syrup is a natural sweetener and I think it tastes so well with peanut butter. You could also use honey instead.
  • Vanilla Extract: this adds extra flavor and is so good in sweet treats

FOR THE CHOCOLATE LAYER

  • Semi-Sweeet Chocolate Chips: These are a great balance between milk and dark chocolate. But any of the three will work. I definitely want to try to make these with a dark chocolate layer.
  • Natural Creamy Peanut Butter: adds extra creamy peanut butter flavor
  • Coconut Oil: the oil helps the chocolate chips melt which creates a bit thinner mixture so it’s easier to work with
  • Sea Salt: adding sea salt on top brings out the sweetness and adds that sweet and salty flavor combo

Ingredients
  

Peanut Butter Layer

  • 1/2 cup quick or old fashioned oats
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 cup natural creamy peanut butter
  • 1/2 cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

Chocolate Layer

  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp natural creamy peanut butter
  • 1 tsp coconut oil
  • sea salt for sprinkling on top

Instructions
 

  • In a medium bowl mix together the oats, almond flour, coconut flour, peanut butter, maple syrup, vanilla, and salt.
  • Spray a muffin tin with nonstick cooking spray.
  • Divide the mixture evenly between the muffin tin, pressing the mixture down slightly.
  • Freeze the tray for about an hour.

Chocolate Topping

  • Add the chocolate chips, peanut butter, and coconut oil to a microwave safe small bowl. Microwave in 30-second increments until melted, about 60 seconds.
  • Remove the muffin tin from the freezer and spoon the melted chocolate mixture over the top of each peanut butter cup using the back of the spoon to spread the chocolate. While the chocolate is wet, add a sprinkle of sea salt (optional).
  • Place the tray back in the freezer for about another hour. Then serve and enjoy!
  • Leftovers can be stored in an air-tight container in the fridge for about a week or in the freezer for up to 3 months.

This really is a delicious Christmas cookie bar recipe that everyone will love! Warm and gooey straight out of the oven pairs well with a scoop of vanilla ice cream. Or at room temperature, once they’re firm, they will be chewy and still so scrumptious!

Easy Blondie Recipe For The Holidays

  • 1 8×8 pan

Ingredients
  

  • 1/2 cup melted, salted butter
  • 1 egg + 1 egg yolk
  • 1/2 cup brown sugar packed
  • 1/4 cup coconut sugar could sub regular sugar
  • 2 tsps pure vanilla extract
  • 1 cup whole wheat flour sub regular flour
  • 1/2 tsp baking powder
  • pinch of sea salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup red and green M&Ms

Instructions
 

  • Preheat the oven to 350 °F
  • Melt butter and let cool until warm or room temperature.
  • In a medium-size bowl add your egg, egg yolk, sugar, and vanilla. Mix well.
  • Add in the warm melted butter.
  • Next, add the flour, baking powder, and salt to the bowl and mix until combined.
  • Fold in the chocolate chips and some of the M&Ms.
  • Pour the batter into a greased 8×8 pan.
  • Add the remaining M&M's on top by gently placing them in the batter.
  • Bake for 14 minutes on convection bake or 20 minutes on regular bake. It's done when the edges are golden brown and a toothpick inserted in the center comes out clean.
  • Let cool, slice, serve, and enjoy!

Notes

Storing: Blondies are best stored in an airtight tupperware container at room temperature for 3-5 days.
Freezing: After cooled and sliced, you can freeze them in a freezer bag.
